Chickpea Salad Recipe
Ingredients:
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 small cucumber, diced
- 1 small red bell pepper, chopped
- 1/4 red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup crumbled feta cheese (optional)
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp cumin (optional)
Instructions:
- In a large bowl, combine chickpeas, cucumber, bell pepper, red onion, and parsley.
- Drizzle olive oil and lemon juice over the mixture.
- Add salt, black pepper, and cumin (if using). Toss well to combine.
- Sprinkle feta cheese on top (optional).
- Serve fresh or refrigerate for 15-20 minutes for enhanced flavors
