🌾 Moroccan-Spiced Cauliflower & Chickpea Bowl

Ingredients
- 1 cup basmati rice
- ½ head cauliflower (cut into florets)
- 1 can chickpeas (drained)
- 1 onion (sliced)
- Olive oil
- Spice blend: cumin, coriander, cinnamon, cloves, ginger, paprika, garlic powder, brown sugar, salt, pepper
- 1 cup plain yogurt (for sauce)
- 3 cups baby spinach
- Pomegranate seeds & almonds (for garnish)
Instructions
- Cook rice with cinnamon stick, cumin, raisins, and salt.
- Roast cauliflower, onion, and chickpeas with olive oil and spice blend at 425°F for 25 minutes.
- Mix yogurt with garlic, coriander, and parsley for a sauce.
- Assemble bowls: rice base, spinach, roasted veggies, yogurt drizzle, pomegranate seeds, and almonds.
